Recipe Text:

The fresh ground cinnamon in this recipe gives it a wonderfully wintery taste. The walnuts used are rich in Omega-3 and the sweet bananas make it relatively low in added sugar - making this Banana Bread recipe practically virtuous in the world of cakes! Enjoy it with afternoon tea or lightly warmed with natural Greek yoghurt and wild honey, as a breakfast treat.

Ingredients

3 - 4 well ripened peeled bananas, mashed
175g plain wholemeal flour
100g roughly chopped walnuts
100g softened butter
100g muscovado dark sugar
50g medium oatmeal
2 beaten eggs
2 tsp baking powder
¼ tsp of fresh ground cinnamon

Preheat your oven to Gas mark 4/180ºc. Butter the sides of a 1kg loaf tin and line the bottom with baking paper.

Place the eggs, butter, flour, oatmeal, baking powder and cinnamon into a large mixing bowl and beat well until evely mixed. Gently stir in the walnuts and bananas.

Carefully transfer the mixture into your pre-prepared baking tin and leave in the oven for 1 hour and 15 mins, or until a cake skewer comes out cleanly from the centre. To stop the top of your loaf from getting too brown and dry, cover it with tin foil halfway through the cooking process.

When your Banana Loaf is ready, wait 5 minutes for it to cool in the tin before transferring to a wire cooling rack.

This recipe makes 10 slices.
