Ingredients:

2.5cm (1in) piece Somerfield root ginger, peeled and chopped

3 Somerfield spring onions, sliced

4 Somerfield skinless salmon fillets, about 450g (1lb), cut into chunks

1 Somerfield medium egg white

55g (2oz) fresh white breadcrumbs

60ml (4tbsp) Somerfield fresh coriander, chopped

Somerfield vegetable oil, for brushing

4 Somerfield ciabatta rolls

1/2 bag Somerfield rocket

60ml (4tbsp) Somerfield mayonnaise

grated zest 1 lemon and 15ml (1tbsp) lemon juice

Method

1.Put ginger and spring onions in a food processor and finely chop. Add the salmon, egg white, breadcrumbs and coriander. Pulse until just combined.
2.Divide the mixture into four portions and shape into burgers. Cover and chill for 20 minutes.
3.Brush the top of each burger with a little oil, then barbecue or grill for 5–6 minutes on each side or until cooked.
4.For the lemon mayonnaise, mix the mayonnaise, lemon zest and juice.
5.Cut rolls in half and toast. Place some rocket leaves on the bun, then top with the burger. Spoon over a little mayonnaise and place the lid on top. Serve immediately.
