Recipe Text:

serves 4
prep time 20 mins
cooking 10 mins

cals per portion 355

450g (1lb) cooked chicken skinned
6 crisp lettuce leaves shredded
8 button mushrooms sliced
2 tomatoes sliced
1 red pepper seeded and diced (any colour will do)
4 hard boiled eggs, chopped


Dressing
3 tbsp safflower oil
1tbsp red wine or malt vinegar
1/2 tsp soy sauce
salt n pepper to taste
1.4 tsp French mustard
a little chopped parsley

Preperation
1) cut chicken meat into thin strips and reserve. arrange shredded lettuce on a serving platter.

2) arrange prepared eggs veg and chicken strips on top of lettuce

3) make dressing. put ingredients into a screw-topped jar and shake vigourously untill well blended spoon a little dressing over salad and serve remainder seperately.

serve with granary or wholemeal bread or buns also add chopped spring onions and chopped cucumber if wished.
